Article Latest post PublicWe are Safe Our area had about 15 inches of rain. Many roads are closed due to washes. Pecan Grove had no damage, except the corn. (Very sad for Danny). Made the trip to deep south and no damage or trees down. Feeling very blessed that corn was the worst of what we had happen. Pray for all in several states. Our rain stopped about an hour ago. Over 10 straight hours of heavy rain.

While waiting, I started cutting up our small onions. I am going to pressure can these for 40 minutes. I stopped and processed the 3 jars of sweet relish and now on onions again. After soaking 3 hours in ice, I mixed up a vinegar, alum and water mixture and simmered 2 hours, rinsed really well and discarded alum water. In separate pot I mixed, vinegar, sugar, water and red hot candy, brought to a boil for 5 minutes. Poured over rinsed slices. The slices stayed in brine overnight. After lunch, I drained brine in a large pot, added a cup of sugar, and boiled a couple of minutes. Poured brine back over slices and left overnight. Today, I drained brine into pot and brought back to a boil. Placed slices in jars, covered in brine, processed 15 minutes waterbath canner. For full recipe and in depth, check out LIFE with Lippy. Today, I washed them 3 times to make sure all the lime was off. Today, they soak for 4 hours in ice water. After lunch we start the brine for red hot cinnamon pickles. They soak overnight. They hold up great in the fridge. I had 7 that i wanted to process before they went bad. I got 4 pints of apples for a rainy day.
